Sittin in bed feeling hungry and sorry for myself as I have no food in the cupboard and am craaaving this pudding.. so thought i'd share it with you. Passed down from my mummy, i've only ever known it as 'Joans pudding', but its pretty much like caramel dumplings. Tastes even better with french vanilla ice cream!
1 1/2 Cups Flour
1 tsp Baking Soda
2 tsp Cream of Tartar
Sift ingredients into a bowl.
Rub in butter, about the size of a walnut.
Add enough milk to make a stiff dough.
Make dough into small balls and put in a ovenproof bowl.
Mix together 2 Tablesp Golden Syrup, 1/2 Cup sugar, 4oz Butter and 2 cups boiling water.
Pour sauce over dumplings and cook covered on 180*C for half an hour.
